This recipe is courtesy of my friend and fellow food blogger Salad Girl Nat. The simplicity of the dish and the ease of prep sold me on the spot. I had to try this for myself.
This is probably one of the best chicken recipes I’ve ever tried. The sauce is simply to die for!
- whole chicken cut up (my chicken was around 4 lbs)
- Shallots peeled
- ¼ cup soy sauce
- ¼ cup balsamic vinegar
- ¼ cup raw honey
- ¼ cup fresh rosemary
- 1 tbsp olive oil
- Pre-heat oven to 425F.
- In a baking dish combine balsamic vinegar, soy sauce, honey, rosemary, salt and pepper.
- Add chicken, turn to coat in mixture. Place into the baking dish. Toss shallots with olive oil and place on top of chicken.
- Roast for about 30 minutes. Turn over and roast another 15 minutes or so. Baste occasionally.
