Soy Balsamic Roasted Chicken with RosemaryThis recipe is courtesy of my friend and fellow food blogger Salad Girl Nat. The simplicity of the dish and the ease of prep sold me on the spot.  I had to try this for myself.

This is probably one of the best chicken recipes I’ve ever tried.  The sauce is simply to die for!

 
Ingredients
  • whole chicken cut up (my chicken was around 4 lbs)
  • Shallots peeled
  • ¼ cup soy sauce
  • ¼ cup balsamic vinegar
  • ¼ cup raw honey
  • ¼ cup fresh rosemary
  • 1 tbsp olive oil
  • Salt
  • Pepper
 
Instructions
  1. Pre-heat oven to 425F.
  2. In a baking dish combine balsamic vinegar, soy sauce, honey, rosemary, salt and pepper.
  3. Add chicken, turn to coat in mixture. Place into the baking dish. Toss shallots with olive oil and place on top of chicken.
  4. Roast for about 30 minutes. Turn over and roast another 15 minutes or so. Baste occasionally.
