Daikon Radish & Asparagus SoupThis simple and quick soup is fantastic for cleansing the kidneys and the urinary tract. Daikon Radish is anti-inflammatory, high in Vitamin C and is a powerful aid in bone health (among many other benefits). Asparagus is packed with nutrients and antioxidants.  The combination of these two powerful ingredients is the perfect recipe for a healthy digestive system in both adults and kids.

 
Ingredients
  • 8 slices daikon radish (washed and peeled)
  • 8 stems asparagus (bottom stems trimmed)
  • ½ tsp ground coriander
  • a pinch of freshly ground black pepper
  • ½ tsp turmeric
  • 1 tsp extra virgin olive oil
  • ¼ tsp sea salt
  • water (enough to cover the vegetables)
  • cilantro or parsley for garnish
 
Instructions
  1. Place all ingredients in a saucepan. Cover with water (water should cover the vegetables entirely), bring to a boil and then reduce simmer. Cook covered for about 15 minutes (until the vegetables are soft). Blend and garnish with chopped cilantro or parsley.
